Our soup starts with a meticulously simmered Bouillon de Légumes—a base of concentrated vegetable extracts enhanced with our unique blend of 20 herbs and spices, plus whole chicken and pork trotters for deep richness and umami. To this, we add our homemade soy milk hot pot base, meticulously crafted from 16 strictly selected ingredients and smooth soy milk.

Our vegetable selection features 6 premium varieties, including carrots and leeks, sliced into a uniform julienne (thin matchstick strips). This delicate cut provides a wonderful texture, allowing you to enjoy a variety of flavors all in a single bite. For the mushrooms, we have curated 6 varieties that pair beautifully with the soup, such as abalone mushrooms, maitake, and oyster mushrooms. Flash-frozen using a specialized rapid freezer, they release a multiplied depth of umami directly into the hot pot.

Sourced from Sekimura Farm in Miyagi Prefecture, our "Sekiboku Kanpo Pork" comes from cattle raised in a low-stress environment on a strictly curated diet of 14 traditional herbs, including perilla and Job's tears. With a remarkably low melting point of $22^\circ\text{C}$, the fat melts easily and is said to leave no heavy burden on the body. Enjoy its soft, tender texture and naturally sweet, healthy fat.

This premium custom paste is an exquisite blend of over 10 varieties of spices and seasonings, including tomatoes, fermented black bean chili oil (Douchi Chili Oil), and crispy chili oil (Xiānglàcuì). We recommend adding about 1/3 of the jar to the soup first, and then adjusting the heat to your personal preference from there. With a generous 80g portion included, you will have plenty left over to season your final noodle or rice dish at the end of the meal!
