Our latest project involved "Kawachi Duck," a proud brand of hybrid duck from Osaka. Specifically, this initiative aimed to give shape to the true value of its rare leg meat, which is highly limited in distribution. Aligning with the producer's passion to bring the deliciousness of this carefully raised cut to more people, we went through multiple rounds of prototyping and dialogue, together refining the best culinary expression to highlight the ingredient's charm.

The approach we arrived at was "confit," a traditional French culinary technique. By slowly and gently cooking the meat in oil at low temperatures, the rich umami is sealed inside while preserving the natural fibers, maximizing the deep richness and elegant sweetness of the Kawachi Duck's fat. While the meat boasts a firm, substantial quality, the texture remains smooth on the palate, offering a profound depth of flavor that unfurls with every single bite. Another major highlight is that you can fully enjoy every bit of flavor, right down to the meat around the bone.

Because the dish is prepared simply, the pure deliciousness of the ingredient comes straight through, creating a delightful harmony when paired with wine. In particular, the fruitiness and gentle tannins of a red wine beautifully elevate the duck's richness and the sweetness of its fat, expanding the flavor profile with every sip. Kawachi Duck Tsumura Honten

Founded in 1870, Tsumura Honten has woven a long history in Osaka. When we visited their local facilities, what resonated with us most was their thorough dedication and honest approach to craftsmanship. While the standard rearing period for ducks is generally around 50 days, Kawachi Ducks are raised slowly and carefully over approximately 75 days. They maintain a spacious environment in large duck houses, keeping a low density of about seven ducks per tsubo (approx. 3.3 square meters), and adhere strictly to a stress-free rearing process using original, pesticide-free feed. This accumulation of dedicated care creates a profound depth of flavor that perfectly combines intense umami with high-quality fat.

Kawachi Duck also boasts the prestigious track record of being selected as an official ingredient for the G20 Osaka Summit. Behind this lies a history deeply rooted in Osaka's food culture. It is said that Toyotomi Hideyoshi fondly enjoyed duck meat, and even after moving his castle from Nagahama in Omi to Osaka, he encouraged production in the wetlands of Kawachi to recreate the deliciousness of the ducks from Lake Biwa. Inheriting the flow of this rich history, the Kawachi Duck of today has been carefully protected and nurtured. What is most impressive is their steadfast stance of believing that "if we steadily continue to produce good things, those who understand quality will recognize it," while completely thoroughly enforcing their management philosophy: "Safety and peace of mind first, in pursuit of freshness and deliciousness." Because they focus on the true essence rather than sheer efficiency, and face their work with unchanging conviction, this exceptional quality is preserved.
